Over ten years ago I posted this fabulous recipe for Scottish sausage rolls which has earned rave reviews. Don’t they look scrumptious?

The only difference between my Scottish sausage roll recipe and this sausage roll recipe is the type of meat that is used. While the Scottish recipe uses ground beef, this sausage roll recipe uses ground pork. That’s it; same puff pastry, same seasonings–still easy-peasy!

As you can see in the photo below, I just LOVE sausage rolls dipped in classicly British HP Sauce! If you’ve never tried it, you’re missing out! It’s vinegary-with a peppery kick, and has so much to add to British fare like traditional sausage rolls.

What is the filling of a sausage roll?

Contrary to what Google search results say, the filling of a sausage roll is simply a tasty, seasoned, ground meat and breadcrumbs or rusk (a filler.) There is no need to buy premade sausage meat as it’s so easy to make your own. It doesn’t look like much, but it’s packed with flavor!

In fact, I see many recipes which include using Jimmy Dean sausage instead of homemade. I beg of you to try my recipe and skip the over-processed, store-bought sausage. You’ll never look back! Why would you want to eat these ingredients, especially if you’re feeding this to your children? You can also control the quality of the meat you buy when you make your own sausage.

What are the Ingredients in Sausage Rolls?

It doesn’t take much to make sausage rolls, especially if you use pre-made puff pastry, you will only need to add ground meat, seasonings and egg for a shiny pastry when baked.

Should you Poke Holes in Sausage Rolls?

No holes are poked in sausage rolls, instead, you’ll slice the top of the puff pastry before baking them.

Ingredients

  • salt
  • black pepper
  • coriander
  • nutmeg
  • breadcrumbs
  • water
  • ground pork
  • puff pastry

Special equipment: baking sheets

Preheat oven to 400º F (200º C)

Directions to Make Sausage Rolls

In a large bowl, mix together the salt with all the spices and breadcrumbs, and then the pork meat.

Add the ground pork, and about ½ cup water. Using your hands, mix all the ingredients together until it has a meatloaf texture, adding water as needed. The sausage should hold together when squeezed, without being too wet.

Unroll the puff pastry on a clean counter, mat or board and roll to make a little larger if desired. Cut into rectangular pieces, depending on the size of the rolls you want to make. You can make small, cocktail size to large sausage rolls. Alternatively, you can make a long roll, and cut into the size desired.

Shape some meat into logs, and place close to one end of the pastry, but don’t put too much meat or they will burst open when baking. Wet one edge of the pastry and fold the other end over the sausage meat.

Press down on the edge of the pastry with the tip of fork tines to seal.

Continue to finish all of the sausage meat and puff pastry.

Make 2 or 3 sharp slits on the top of each sausage roll.

Place on silicone or parchment lined baking trays.

Place into preheated oven and bake for about 25 minutes or until golden brown. Turn trays around and switch levels after 15 minutes for best results and even cooking of the sausage rolls.

Remove from oven and place on cooling rack for a few minutes before serving.

What to Serve with this Sausage Roll Recipe

Although sausage rolls can be served simply with a dipping sauce like HP Sauce or even ketchup, they make a great meal by any combination of the following traditional sides:

  • Heinz Beans
  • mashed potatoes
  • chips (French fries)
  • peas
  • baked potato
  • boiled potatoes

Can I Freeze Sausage Rolls?

Sausage rolls freeze really well and are a great for parties and gatherings! Try this: bake them as directed below, but take them out of the oven about 5 to 7 minutes early so they’re not as golden brown as you would want them. Cool completely, then freeze.

Ingredients

  • 1 ¼ tsp salt sea salt (more or less according to the saltiness of the salt you use)
  • ¾ tsp black pepper freshly ground
  • ¾ tsp coriander (dried, do not use cilantro)
  • ½ tsp nutmeg ground
  • 1 c plain breadcrumbs dry
  • 1 c water (or less)
  • 1 lb ground pork
  • 18 oz puff pastry frozen, like Trader Joe's (all butter is best) or homemade

Notes

  • TIP: if freezing, underbake them a tad so you can get them golden brown when you reheat them.
