I am honestly not someone who loves super sweet drinks. I do enjoy a good hot chocolate or peppermint mocha seasonally, but in general, I take my coffee and tea without sugar.
With espresso martini being all the rage the past few years, I decided to try my hand at making a seasonal twist on the cocktail for a party I was to attend. To my delight, the taste that just a teaspoonful of this pumpkin spice simple syrup adds to the cocktail was flavorful, but not overpowering. It’s a great addition for festive fall and winter cocktails!
What is Pumpkin Spice Syrup Made of?
All you need for pumpkin spice simple syrup is a few spices you probably have in your pantry, sugar (brown or white), water, and the optional pumpkin puree.
You definitely don’t need the pumpkin puree for this recipe. You can also increase or decrease the cinnamon, nutmeg (did you know humans have been using nutmeg in food for over 3500 years?!), and ginger, for your own personal classic “pumpkin spice” flavor that you prefer. However, if you have it, I find the actual pumpkin adds a nice touch and thickens the syrup slightly. AND you can con yourself into believing you’re consuming a vegetable. 😉
To be completely honest, this recipe came about because I had a little bit of pumpkin puree left over from making multiple loaves of pumpkin chocolate chip bread (my favorite in the fall!). I wasn’t sure what to do with just a little bit of pumpkin, and before giving it to the dog, I decided to make a pumpkin simple syrup.
You can definitely buy pumpkin spice simple syrup, but when the recipe is this easy, it’s a budget-worthy treat to just make at home. I have gifted small jars of this syrup to friends, and it’s always a welcome treat (add a ribbon around the rim and it’s so cute)! I also love prepping this vanilla extract before the holidays to give as gifts.
This is a seasonal flavor that I love to put in my pumpkin spice espresso martini recipe.
Other seasonal cocktails you can make are peppermint martinis (inspired by one my mom had at my favorite bar in NYC, Biddy’s Pub) and a classic eggnog martini. But the classic hot toddy, Irish coffee, and authentic Rüdesheimer coffee are also perfect drinks with a kick to warm you up as the temperatures drop.
Pumpkin Spice Simple Syrup

Ingredients
- sugar
- brown sugar (optional)
- water
- pumpkin puree (optional)
- cinnamon
- nutmeg
- ginger powder
- allspice
- (OR omit the spices above and use pumpkin pie spice)
Directions
Combine the Ingredients
Combine equal parts sugar (brown and/or white – you can use either or both) and water in a saucepan.
Add the pumpkin puree (if using) and pumpkin pie spices (cinnamon, nutmeg, ginger and allspice).
Simmer
Stir and simmer over medium/high heat until slightly thickened (approximately 10 mins). Let cool before using.
Enjoy with a cup of tea or coffee, or cocktail of your choice! This will keep in a jar in the fridge for a few weeks.

- ½ cup sugar
- ½ cup brown sugar
- 8 oz water
- ½ tsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp allspice
- ⅓ cup pumpkin puree (OPTIONAL)
Instructions
- Combine equal parts sugar (brown and/or white – you can use either or both) and water in a saucepan.
- Add in your pumpkin puree and pumpkin pie spices (cinnamon, nutmeg, ginger and allspice).
- Stir and simmer over medium/low heat until slightly thickened (approximately 10 mins).
- Let cool before using.
Notes
- The pumpkin puree can be omitted if desired – the pumpkin spice flavor will come through with the spices added. Try the syrup and add cinnamon/ginger, etc as needed.
- This can be stored in a jar in the fridge for a few weeks. The pumpkin puree may separate, but you can stir and enjoy.
