Individual Apple Galettes
Individual apple galettes are so quick and easy to make, but look oh so impressive. Serve with whipped cream or vanilla ice cream, or simply in the nude (the dessert, not you).

If you ever need to make a “dessert to impress”, but have no idea what to make, individual apple galettes are a perfect choice.

Not only does this apple galette recipe look beautiful and impressive, but it is also a delightful combination of crispy pastry and delicate fruit, with no added sugar. The only sugar is in the light brushing of jam. If you want even less sugar, simply omit the apricot glaze.
An easy no-cook dessert: Pineapple and Cream Digestives
An apple galette with puff pastry is a definite “cheat’s dessert” as there’s almost no work involved!
The ingredients are minimal, and if you can slice up an apple, you’re good to go. You can even make them square, which is even easier. I think the round apple galettes look much prettier, though.
Individual Apple Galettes
Adapted from Good Housekeeping Desserts Cookbook Serves 6

Ingredients
- frozen puff pastry (either 5×5 pieces or large sheets)
- Granny Smith apples, peeled and thinly sliced
- biscuit crumbs (Digestive biscuit/vanilla wafer type cookie)
- butter
- apricot jam or marmalade for the “glaze”
To Serve: whipped cream or vanilla ice cream (optional)
Directions for Apple Galette Recipe
Preheat oven to 425ºF (218º C)
Roll the 5×5 sheets to 6×6, or a larger roll to a slightly thinner dough.
Use a 6″ diameter saucer or bowl as a guide and cut the dough (or you can make them square).
Place the pastry on a cookie sheet lined with a silicone sheet or parchment paper, and sprinkle one tablespoon of biscuit crumbs onto the center of the circle.
Begin placing the apple slices in a circular pattern, leaving a small edge of pastry to form a crust.
It should look something like this. Don’t worry about making the galettes look perfect, they’ll look great when they’re finished.
Brush apple slices with butter. Repeat with the other five.
Bake for about 20 minutes or until the puff pastry is lightly browned and crisp and apples are tender.
In small saucepan, over low heat, warm the jam or marmalade until melted, then brush over the apples while still warm.
If it’s too thick, thin with a little water or liquor of choice.
Serve the individual apple galettes with fresh whipped cream or vanilla ice cream, if desired. I personally enjoy them plain.
I also like apple galettes warm from the oven.

- 4 whole Granny Smith apples (medium sized,peeled and thinly sliced)
- ½ cup biscuit crumbs (Digestive biscuit/vanilla wafer type cookie)
- 3 Tbsp butter (melted, good quality)
- ⅓ cup apricot jam (or marmalade)
Instructions
- Preheat oven to 425ºF (218º C)

- Use a 6" (15.2 cm) diameter saucer or bowl as a guide and cut the dough (or you can make them square.)
- Place the pastry on a cookie sheet lined with a silicone sheet or parchment paper, and sprinkle one tablespoon of biscuit crumbs onto the center of the circle.
- Begin placing the apple slices (use ½ apple per pastry) in a circular pattern, leaving a small edge of pastry to form a crust. Brush apple slices with butter.
