Green Garlic Potato Salad

A green garlic potato salad is a unique and healthy change from the ordinary.
The simplicity of this potato and green garlic salad allows the flavor of the Golden Idaho® Potatoes to be the star of the show. Of course, you can use whatever type of potato you prefer to make this simple springtime salad, but golden potatoes work well in this recipe.

Now, we get to the green garlic part of the salad: with Earth Day around the corner, Memorial Day (picnics and barbecues) not too far off in the distance and everyone trying to be more healthy and “green,” by reducing, reusing, and recycling, this recipe hits a grand slam! Garlic scapes are the green stalks that grow from the cloves of garlic.
How many of you have ever had garlic do this?
What else to do but throw it out, right? WRONG. Even if you live in an apartment, you can grow green garlic in a small pot, and in a few days, you can use it in your own potato salad (or however you choose to use it.)

What is Green Garlic?
Green garlic are the leaves which grow from the cloves of garlic before they are mature. They have a unique, garlic flavor–more mellow than the actual garlic clove itself. In this recipe, they impart a wonderful addition to the delicious flavor of potatoes.

What are Garlic Scapes?
Garlic scapes are a more firm, curly stem which appears in growing garlic later on in the maturing process. They can also be used in this salad and other dishes. However, you don’t even have to wait for the scapes to appear, you can also use the green leaves of the garlic (if you aren’t concerned about actually growing the garlic to maturity).
Now, if you happen to be someone who doesn’t have garlic growing in your pantry or garden, do not fret, you can substitute green onions in this salad. All you need are four ingredients, so let’s get started.
Green Garlic Potato Salad

Ingredients
- organic potatoes, like Idaho® Potatoes
- good quality extra virgin olive oil
- Kosher or sea salt, to taste
- green garlic (alternatively, you can use green onions)
Directions
Scrub/wash the Idaho® potatoes and place in a pot of cold, salted water (about one teaspoon of salt) and bring to a boil, then simmer gently over medium high heat until cooked.
Drain and let cool slightly, then peel.
Place in a bowl, and let cool completely.
Meanwhile, chop the green garlic.
When the potatoes have cooled, cut them into smaller pieces (I cut the smallest potatoes into halves, and the larger ones into thirds.)
Now, drizzle generously with the olive oil (at least 3 tablespoonfuls), sprinkle with salt if needed.
Finally, toss in the green garlic leaves.
Gently mix or toss to make sure the flavors of all the ingredients blend together well.

This can be served immediately, however, the flavor of the garlic improves if left for an hour or two (refrigerate if you have to, but bring to room temperature before serving.) Putting potatoes in the fridge changes the flavor, so I recommend making this salad a few hours before you want to serve it.
This makes a perfect picnic dish, or accompaniment to your spring and summer barbecues! And if you just so happen to have any leftovers–fry ’em up! Place the potato salad in a non-stick pan or wok and heat until slightly brown and crispy!

- 3 Tbsp extra virgin olive oil (or more, good quality)
- ⅛ tsp Kosher salt (or sea salt, to taste)
- 1 bunch green garlic leaves (chives, or green onions)
